Spotlight RecipeCopycat Macaroni and Cheese by Bravo’s Top Chef Richard Blais¼ cup flour Melt butter in a pan over low heat and whisk in the flour until it has a sand-like texture. Add milk and bring to a boil. Reduce the heat and mix well. Add cream cheese and yogurt. Once the mixture thickens, remove it from the heat and whisk in the shredded cheese, garlic salt, and white pepper. Pour the sauce over cooked noodles and stir well before serving. Popular chef, cookbook author, and TV personality Richard Blais was born in Uniondale, NY, on February 19, 1972. His first cooking job was making Filet-O-Fish sandwiches at McDonald’s. Blais graduated from the Culinary Institute of America in New York. He is best known for appearing on Bravo’s Top Chef. He won Top Chef: All-Stars and eventually became a judge. He has appeared on Top Chef Masters, Chopped All Stars, and Iron Chef America. He is the chef/owner of Trail Blais, a creative culinary company that consults for, designs, and operates popular restaurants nationwide.
