Celeste Ng’s Raspberry Honey Greek Yogurt Popsicles

½ cup water
½ cup sugar
1 ½ cup plain Greek yogurt
1 Tbsp. honey
2 cups raspberries
1 Tbsp. lemon zest

Heat water and sugar in a pan until it becomes a syrup. Add lemon zest, reduce heat, and simmer for five minutes. Cool to room temperature, strain, and refrigerate until chilled. Mix yogurt, honey, and syrup and pour half full into popsicle molds. Freeze for 40 minutes. Then add raspberries and remaining yogurt mixture. Cover with lid and insert the popsicle sticks. Freeze for four hours and enjoy!

Celeste Ng (pronounced “-ing”) was born July 30, 1980 in Pittsburgh, PA. Her father was a physicist at NASA, and her mother was a chemist who taught at Cleveland State University. Celeste graduated from Harvard University and received an MFA from the University of Michigan. She has written the New York Times best-selling novels Everything I Never Told You, Little Fires Everywhere, and Our Missing Hearts. She has received the Pushcart Prize, a National Endowment for the Arts fellowship, and a Guggenheim Fellowship, among other honors.

Did you know the number of feathers a bird has varies by species? Hummingbirds typically have about 1,000 feathers, swans have up to 25,000, and an emperor penguin has approximately 80,000 feathers! Feathers not only help birds fly but also stay warm, repel water, provide camouflage to blend into their surroundings, insulate nests and eggs and young, and help birds show off to attract mates. Today, birds are the only animals with feathers, but paleontologists have discovered that some dinosaurs likely had feathers, including the Tyrannosaurus rex.
